When Punxsutawney Phil popped his furry little head out of his Pennsylvania hole on Feb. 2, 2013, there was no shadow to be seen. News quickly spread across the country: Spring would come early this year.
But here we are, six weeks later, and much of the U.S. is still deep in the throes of winter. It seems Phil really messed up -- and people aren't pleased.

Groundhog soup is normally strong , and has a pungent smell. I normally recommend "stewing" in lemon juice with onions and green peppers.

The suggested method would be to soak over-night in a egg and milk mixture. I prefer using saltines crackers as a coating. Pan fry on each side for 5 minutes. Transfer to a preheated (400) for 90 minutes. Serve with cole-slaw.
